Dill n’ Maple Fridge Pickles: Wash and slice cukes. Put the cucumbers, a dill flower, a peeled garlic clove and 2 tablespoons of maple sugar (or syrup) in a pint jar. Fill with white vinegar and refrigerate until snack time!
This is not a drill.
End-of-summer is the high-water mark for maple recipes, and it’s time to harvest! Like to eat your maple? Read on!
Breakfast
Maple for breakfast is fruit forward these days with Berry-Stuffed French Toast, Blackberry Breakfast Bars, and standard-bearing Fresh Blueberry Muffins. And the flapjack recipes are getting positively out-of-hand: there are Baked Buckwheat Pancakes with Berry Compote, Apple-Ricotta Pancakes with Pale-Ale Maple Syrup, and “Fat-Arse” Souffle Pancakes.
Cookies are on the menu first thing in the morning with Busy Morning Breakfast Cookies and Carrot Cake Breakfast Cookies.
Too much? You can opt for simple Maple-Sweetened Granola instead.
Lunch & Dinner
Oh, salad! The summertime no-cook miracle! We could go for a Vegan Wedge Salad with Smoky Coconut Bacon & Hemp Seed Ranch Dressing, a Vietnamese Chicken Salad with Sugar Snap Peas, Coriander & Shallotts, or a Strawberry, Kale & Arugula Salad right about now. Couldn’t you?
But hope springs eternal for a chilly, soup-forward evening. We have several serving suggestions: Maple Corn Chowder, Creamy Pumpkin Soup or Coconut, Spinach & Red Lentil Dhal. Pair with Maple Oat Bread.
In other dinner options: Maple Glazed Black Pepper Chops, Sheet Pan Chicken, Szchuan Shrimp and Eggplant Bruschetta. Make it a meal with Maple Bacon Baked Beans or Sweet Heat Chili Maple Grilled Corn.
Desserts & Drinks
If only we could taste them all: Warm Maple Cinnamon Figs on Vanilla Ice Cream, an End-of-Summer Trifle, Watermelon Gelato, Cherry Cristo, and Peach Crisp with Maple Cream Sauce. Avacado-Lime Cheesecake Bites, Sweet Corn Maple Syrup Ice Cream, and Peanut Butter Chocolate Chip Cookies. Maple Cream Soda. Banana-Berry Slushie. Perfect Popsicles. Vegan Sweet Potato Cake with Thick Sweet Potato-Coconut Frosting. Creamy Pumpkin Custard. In other words: total maple dessert insanity.
Until you mix up a Red Maple Sour or a Death in the Afternoon, Hemmingway style, and get a good night’s sleep, waking to eat through another sweet, late-summer day!
