ugh. What a stupid winter we've had! Here in Vermo ugh. What a stupid winter we've had! Here in Vermont, we've heard tales of professional sugar makers starting to boil in NOVEMBER, we got rain instead of snow until late last month, and we've just been out-of-sorts about it! How can a person be expected to wait patiently for sugaring season when the big outfits started months ago and you can't winter sport!?!?!?⁠

Sap is organic matter and will eventually go bad i Sap is organic matter and will eventually go bad if not stored correctly. Luckily, sap will store for a week or two if stored in natural refrigeration. ⁠

For us, that means a snowbank in the shade! In the southern reaches of sugar country, where there typically isn't snowpack, some people put their sap into sealable containers and keep them cool in nearby streams! The CDC recommends boiling water found outdoors for 1 minute and then allowing it to cool before consuming it. (Boil for 3 minutes if you are at or above 6,500 feet elevation.) This is our best guess at the best practice for safe, worry-free sap consumption. You're welcome!⁠

Trees that are 10" in diameter at chest height can be tapped once. At 18" and above, twice. But it is not recommended to tap a tree more than twice no matter how big it is. ⁠
